Garlic Bread Snacks

Here’s something very nice and very Latvian to make – Garlic Bread Snacks.

All you need is;

  • Rye bread
  • Garlic cloves
  • Sunflower oil

Take about 7 slices of bread (you can take as many as you want) and a couple of garlic cloves. Cut the garlic cloves into small pieces. Stack the slices like in the photo above and cut them into about 3-4 cm narrow pieces – like in the photo below.

Throw the garlic and the pieces of bread on the pan along with sunflower oil and cook on medium-high heat. Make sure there are no pieces of bread on top of other pieces of bread – you’ll have to cook them from both sides. When they are nice and brown, take them off the pan and put them on a dish or a bowl and add some salt if you wish. They should look something like in the photo below.

They are great tasting snacks, especially with beer. Very easy to make too.

Full Irish Breakfast

Something different this time. Since I have been living in Ireland for a while, here’s something Irish you can make yourself too. Full breakfast. There’s a few variations of this “full breakfast”, but if I order it or make it myself, this is the way I’m having it.

The ingredients I will be using are;

  • 2 slices of bacon
  • 2 eggs
  • 3 pork sausages
  • half a can of beans (~100 grams)
  • half a tomato

Basically, this breakfast is very easy to make but the trickiest thing is to get everything done at the same time so it’s all nice and warm when you’re eating it. Throw the sausages on the pan first as they take the longest to cook. Cook them on medium-high heat. Break the eggs and add them to the pan about 3-4 minutes later. Put some salt and pepper on them if you wish. Then add bacon and the tomato.

When everything on the pan is nearly done, put the beans in a shallow bowl and put them in the microwave for 60 – 90 seconds. You can put some slices of bread in the toaster and put the kettle on to make yourself a cup of tea or coffee. After you’re all done, the end result should look something like in the photo below.

Latvian Style Pancakes

Today on the menu – pancakes, Latvian style.

Here’s the list of ingredients that you will need:

  • Flour
  • Eggs
  • Milk
  • Sour Cream
  • Cooking oil
  • Sugar

Here’s a photo of everything in the list above:

First things first, get a large bowl. Crack the eggs and put them in the bowl. Add flour and milk (I’m using about 250 grams of flour and 150 ml milk)

Mix it all together. Make sure there are no lumps and that it is nice and smooth, not chunky. Here’s a nice little tip: you can the cooking oil and this point, and then you will not have to put any oil straight into the pan. Now, pour the pancake mix into the pan.

Make the pancake as big as you can and cook it on medium-high heat. While it is cooking, grab a glass, mug or something similar. Take about 10 teaspoons of sour cream and 2 teaspoons of sugar and mix them together, like in the photo below:

When your pancake has done cooking, grab a plate and put your pancake on it. Spread the sour cream on the pancake and roll it up.

Get yourself a knife and a fork and enjoy.

Sausage in dough

This is a recipe for sausage in dough, or as we call it in Latvian – “cīsiņš mīklā”.

Here are the ingredients that you will need:

  • Flour (~ 400 grams)
  • Butter (~ 200 grams)
  • Milk (~ 150 ml)
  • Yeast ( ~ 70 grams)
  • Sausages
  • Ketchup
  • A teaspoon of sugar and salt (optional)
  • Cheese (optional)

Get a large bowl and put in flour, yeast, butter and milk.

Mix everything together and you should end up with something like this…

Leave it some place warm for about 30 minutes. Then, spread some flour on your table and get your rolling pin. Roll out the dough, just like in the picture below.

Once it looks like something in the picture, cut it into narrow strips. Also, get a dish and put some ketchup on it. Take the sausages one by one and roll them in the ketchup.

Then take the sausages and wrap them in the dough. Once you have started doing this, turn on the oven to 200 degrees Celsius. Place all the wrapped sausages on an oven pan and put some grated cheese on them, if you want to.

Cook them in a pre-heated oven for about 10-12 minutes, and voila! Enjoy.

Latvian Breakfast (Omelette)

Since this is my first post, I thought that I will start off with something easy. I’ll show you how to make a delicious omelette – Latvian way.

Here’s the ingredients that you will need:

  • Eggs
  • Sausage
  • Onion
  • Salt & Pepper (Optional)

I will be using three eggs in my omelette, but you can add two, three, four or maybe even five. Start by cutting the onion and the sausage into small pieces. I’m using about 1/4 of the onion and a whole hot-dog size sausage.

Then, break all eggs into the bowl and mix them all together. The next step is to add the diced sausage and onion. Mix everything together again and pour it all into a pan.

Cook on medium-high heat. Add salt and pepper, as much as you like, before flipping the omelette to the other side. While it’s cooking, put on the kettle and make yourself a cup of black tea. Also, get a slice of bread or two and spread some butter on top. I’m using classic Latvian rye bread. Once it’s all done, it should look something like this. Enjoy.
